rice & beans.

In my opinion, the best meals are the home cooked ones by moms. I don't know why? Aside from my mom's cooking: Lui's mom's empanada, cod fish and rice (honestly just about anything that comes from her kitchen is gastronomic!), Julia's mom's pasta, my "brother-in-law's" mom's roast beef and spicy crab, Keith's mom's chicken & rice... the list goes on.

Here in NY, I'm an adopted son to a Puerto Rican mom. Maria is one of the ladies I work with at the store and she brings me food sometimes. I once requested her to make me yellow chicken rice and she made it for me one lunch. She also made me chicken and rice (like arroz caldo) when I got sick with GERD and even called me one night to check up on me when I went home earlier from work since my stomach pains just got worst. One time she brought me octopus. I love her to bits! She talks to me in Spanish sometimes, which I sort of understand... we have a good time when we work together (we work the same schedule). This Thanksgiving, I'm looking forward to her coquito (Bacardi and coconut milk).

Sunday, she brought me lunch and said that it was a surprise...


Chicken with rice and beans. I can eat this everyday! Thank you Maria for being my mom here in NY :)
